Wagyu

Renowned for rich flavor, intense marbling, great texture, and nutritious meat.

Wagyu beef is renowned for its rich flavor and intense marbling. It is a cattle breed from Japan that is now popularly bred overseas. According to the research of Meat Standards Australia (MSA), one of the key components of good quality of meat is stress-free cattle. Therefore, the quality of meat does not only include the  cattle breed, but also farmer skills and logistic management. Our Wagyu cattle have a diet, lifestyle, and environment that are carefully being managed to produce the best quality of meat.

In JH Farm, we are selective with our supply. We want our customers to experience and taste the best beef in the world. Our selections of Wagyu are usually from Japan and Australia. Both supplies are with certification and good track record.

Australian Marbling Score

MSA Grading uses Marble Score (MS) of 0-9

Marbling_Strip.jpg

Marbling score is a component of the AUS-MEAT beef quality grading system, and refers to visible fat found between muscle fibre bundles and is assessed within the ribeye muscle. Marbling score is assessed visually by an AUS-MEAT qualified grader during the process of carcass grading using the scoring range 0 to 9 below, and is therefore a subjective measure. In addition to the quantity, the distribution and texture of visible fat flecks within the ribeye are considered during assessment of marbling score.

Japanese Meat Grading

Japanese Grading is C1 - A5

articles_wagyu_pic4.jpg

Japan is currently graded by the Japan Meat Grading Association on the basis of the yield grade and meat quality grade.
The yield grade refers to the ratio of meat to the total weight of the carcass, and is classified into 3 grades from A to C, with A providing a higher yield. The meat quality grade is classified into five grades from 1 to 5, based on four criteria: fat marbling; the colour and brightness of the meat; its firmness and texture; and the colour and brightness of the fat. The lowest of the four individual grades becomes the final grade allocated to the meat.
A thorough grading system of 15 grades (using a combination of the two above-mentioned elements) ensures a clear indication of Wagyu meat quality and yield grade.

Halal Wagyu

Halal-logo-Jan-2015.jpg

All imported meat in Malaysia are required to be halal certified. Our Wagyu is with halal certification from either Australia or Malaysia. They are strictly being monitored by local authorities to make sure the best quality of meat are being imported.

There are many misunderstanding that all Wagyu cattle are being treated with alcohol, therefore, it violates halal requirements. This is a misconception that not all the cattle are being treated as such.  There have been a lot of illegal import of Wagyu into Malaysia without halal certification. In JH Farm, we do not supply such Wagyu. Our meat products are with proper channels and careful selections.
